Growing on limestone clays and sandstones of marine origin, the well-drained and well-ventilated vines face south and south-west. The grapes are harvested very early for Sangiovese, in the last week of August and first week of September. All harvesting is done by hand, and the grapes go through a tripartite manual selection process: first in the vineyard, and twice more in the cellar before they are lowered gently into the vats.
Once in the cellar, the grapes are softly crushed and constantly monitored in order to halt the pressing immediately its initial stage is over, before vegetable astringencies and excessive hardness set in. This is followed by a cold static decantation of the grape must, without the use of any additives. Subsequently, fermentation takes place in temperature-controlled steel tanks. The wine is bottled in the March of the year after harvest, after 4 months on the lees.
